Chris & Cathy Corrigan
Chris has had a long career as an entrepreneur. He has built and run several successful businesses over the last 40 years. Chris was always an excellent home cook, taught by his Grandmother and Mother, both of whom were great home cooks drawing on the rich food history of the Waterloo Region. In the early 1990’s Chris was bit by the BBQ bug when he and his wife Cathy extensively traveled the American South. It was multiple trips to Texas, however, that ignited his passion and led him to buy his first “real” smoker (before any butcher in KW knew how to cut a proper brisket!) Before long he was perfecting his own BBQ rubs, sauces and southern home-cooking. Chris & Cathy ventured onto the competitive USA BBQ circuit in the mid 2000’s and spent many weekends on the road, always placing in the top 10 and eventually winning a Grand Championship!
Chris helped to usher in Southern BBQ to Waterloo Region, and Canada for that matter, as Hog Tails BBQ was one of the first true BBQ joints to bring competition style BBQ and Southern cuisine home to Ontario. Chris and Cathy continue to travel south to perfect their recipes and to experience Southern food and culture. They are members of The Southern Foodways Alliance based at the University of Mississippi in Oxford, and communicate with Chefs, Restaurantuers and “prominent food and food-culture people” continually. Chris has forged many great friendships in his travels and has been in many kitchens all over the south. Chris & Cathy want their customers to experience great southern food, as well as true Southern Hospitality with a Waterloo County spin.

Tim is an honours graduate of both George Brown College Culinary School and The University Of Waterloo, where he achieved a degree in Arts & Business.
Tim joined Chris & Cathy at Hog Tails BBQ as a part time employee in 2007. Tim has a passion for all things food but was particularly interested in Southern BBQ when he joined the company. He has a great capacity for learning and he quickly immersed himself in all things BBQ. Working beside Chris, Tim became a key member of the Hog Tails team. When the first restaurant opened, Tim was cooking part time while still attending University.
Recognizing that BBQ was becoming a new culinary trend in Canada, Tim guided Hog Tails and subsequently The Lancaster Smokehouse kitchens in bringing Southern foodways to the Waterloo Region. His inventive authenticity-latent style incorporates all things local. Tim works diligently with local farmers and food purveyors to keep The Lanc fresh and local. Tim is The Lancaster Smokehouse’s Corporate Chef and in 2015 became a co-owner.
HR Manager & Assistant VP Operations
Caitie Agostinho is Chris & Cathy’s daughter. She is a graduate of Conestoga College’s Business Administration program and also attended the University of Waterloo. Caitie has been with the company since her graduation and has experienced all aspects of the business. She brings a strong passion for serving our customers and immersing them in The Lancaster Co.’s “Southern Hospitality”.
Caitie directs company administration and manages front of house activities. She also develops and implements our training programs and quality systems.
Caitie also became a co-owner of The Lancaster Smokehouse in 2015.
Manager Catering & Events
Neil Nunnamaker joined the management team of the Lancaster Co. in 2016. Neil has an extensive background in foodservice and hospitality and is a graduate of Wilfrid Laurier University where he attained a degree in Honours Business Administration. Neil directs the Sales, Marketing and Operations of our Catering & Events business.
Neil is responsible for developing our growing Catering & Events business. He is deeply involved in the customer experience and strives to custom design each event. He manages a team for both in-house events in the Lanc Loft (upstairs) and off site events utilizing our mobile kitchen, The Lancaster Smokehouse Food Truck.
Master Baker for Crumb
Crumb Bakehouse is run by Martha Borys, a master in her own right when it comes to breads, cakes and pastries. Martha is a graduate of George Brown College and the University of Waterloo, and has played a key role at prestigious businesses in the hospitality industry such as the Berlin and Langdon Hall. She was also the sole baker and production manager for a bakery in Cambridge Ontario for several years. Martha has gained a rapid reputation in KW since joining the Lancaster Team for her unbelievably delicious homemade pies and baked good.
